You can't add a subscriber from the admin page, that's true - I can look into changing that, presumably re-using the "paste in e-mail addresses" UI that we offer for adding users to a group. (We really need to hack up an AJAX select-a-user UI!)
But I believe that if you click on the number of users under "Subscribers" and then on a user's name you'll see that there's an "Unsubscribe" button, so that functionality is there now.

Only boards that you are allowed to read should appear on the /discuss page - but remember, you're in the Web-site Admins group, so you can see and read all the forums! Try logging out, and you'll see only the publicly-readable forums; register and log in with a non-admin test account and you should still see only the forums available to registered users.
